Speck & Asiago Cod Fillet with Peaches & Fresh Basil

SPECK & ASIAGO COD FILLET WITH PEACHES & FRESH BASIL – 4 servings

  • ¾ - 1 pound fresh thick Cod Fillet fillet, skin removed
  • 2 ounces Speck (about 10 slices)
  • ¼ cup fresh basil leaves
  • 1 medium to large peach, sliced
  • ¾ ounce julienned Asiago Fresco
  • Preheat oven to 450°.
  • Rinse the fish and pat dry.
  • Lay the Speck slices in a ceramic baking dish.  Place the fish on top.  Place the basil leaves on top of the fish, then the Asiago.  Place one layer of peach slices on top of the Asiago.
  • Wrap the speck around the fish, basil, cheese, and peaches.  Top with more peach slices and bake for 13-15 minutes.
